The article describes the technologies of honey falsification, with the aim of making it cheaper, which are being improved every year. It is not uncommon for cases when it is impossible to identify fraud using simple physical and chemical methods. There are no certified methods in Russia for detecting honey falsification. This review article examines four methods that are used in foreign practice to detect the falsification of honey with sugar syrups.
